» Black Fungus Mushroom
It has been successfully tested and cultivated in substrate bags with environment control at our local farm, with the use of imported organic mushroom spawn from China. These black fungus mushrooms are usually dark brownish-purple, its cap is floppy-firm and whorled. When dried, it will keep indefinitely and when reconstituted, will expand to three or four times its size. Medicinal uses: Black fungus has a reputation in Chinese herbal medicine for increasing the fluidity of the blood and improving circulation. It is used as a tonic for lung infections and stomach upsets. These black ear fungus provide high protein and essential amino acids. Low in fat and high in fiber, they also provide vitamins which stimulate the immune system. They contain black ear fungus protein that is comparable to high quality animal protein. It is superior to vegetables and cereals proteins. Hence, it can substitute non-vegetable diet and provide a valuable source of high quality proteins to vegetarians. It also contains carrotene, Vitamins B1 and B2. Additionally, the mushrooms are high in mineral content, particularly phosphorus and potassium, iron and calcium. It is a very good blood tonic, containing 7 times as much iron as pig's liver. It also possesses powerful inhibitions to the agglutinating tendency of blood platelets and helps to lower the level of blood lipids, including blood cholesterol. Recent reports reveal that constant consumption of this fungus is also helpful for the prevention of tumors. Excellent eaten raw or lightly cooked, fresh black cloud ear fungus has a beautiful, velvety-smooth texture. It can be added to salads, soups or stir fries. Valued in Chinese cooking, crunchy black slices of this mushroom are often found in hot and sour soups. It can be stored in a plastic bag under refrigeration for up to two weeks. The Wood Ear no appreciable flavor, although it will readily absorb flavors from other foods cooked with it. For this reason, it is commonly used in hot and sour soup as well as stir fries. They should be washed briefly under cool water to clean them and allowed a few minutes to air dry. Need not soak the fresh form of Wood Ear. They are porous and will absorb water. The mushrooms are 90% water. When cooked, some water will evaporate, concentrating their juices and intensifying their flavour. 黑木耳亦名木耳、木耳色泽暗褐,状如人耳,质地柔软平滑,干品脱水形成近黑色的脆硬角质结构,清水浸泡后恢复原状。木耳是具有极强保健和医疗价值的食药兼用的蕈菌。味甘,有清肺益气、止血活血、滋润、强壮、通便、预防肿瘤的功效。木耳主要用于烹饪菜肴,无论凉拌、热炒,与鱼、肉、瓜果、蔬菜相配,氽、溜、烹、炸、煲汤、炖菜,都能保持入口柔嫩滑脆的独特风味。营养丰富是木耳的另一优点。所含的维生素、钙、磷、铁等也大大高于肉类和禽蛋,故有“素中之荤”之称。
